Cooking food that is tastes good and also provides an ample amount of nutrients for your body is a daunting task. I'm always up for the challenge and on a constant search for delicious and nutritious recipes to create. This is my go to Meatless Monday creation: Roasted chipotle cauliflower, sautéed red onions, black beans, feta cheese, and homemade guacamole, on a whole wheat tortilla. Good and good for you!
